There actually is a difference between jam and jelly. Jam is chunkier, containing seeds and peices of fruit. In jelly, fruit juice is mixed with gelatin, so its smoother and contains no actually peices of fruit.

I'd say like at least a foot, you dont want to accidently catch on it when airing out. And it looks to be only 2 feet tall, i'd make it more like 4 at least, since you will get quite a bit of height out of the quarter.
